Customize pop revision 2

This PR does the following:

Re-organizes the original article with an emphasis on the Pop-included extensions first.
Includes more details about GNOME Tweaks (needed for theming)
Adds updated pictures of extensions installed in Pop 21.10.
Cuts down on the number of 3rd party extensions recommended.
Adds links to documentation/source-code for internal and external extensions.
All extensions featured are installed and known-good versions in 21.10.
