monorepo-builder feat: add "--version-prefix" option for Release Command

I'd say this is personal preference. Instead of changing this back and forth, we could have a configurable format. What do you think?

@TomasVotruba Sorry to bother, but I got this question: I am currently working on a monorepo over php7.3, but this branch I submitted to is on php8.1 now. And I am not sure I will be able to use the new feature after this pull request is merged. Should I make another pull request to somewhere or .. ?
