CI: update to more recent Pharo versions

I changed Pharo versions used in the CI workflow from 9, 8 and 7 to 13, 12 and 11.

Hello @svenvc I did this PR out of curiosity, to know if it works on current Pharo. I didn't try it on these versions... I wonder what's the result of CI runs!

I have expanded the build matrix to include versions 7 to 13, all passing after doing some long overdue fixes.
