Successive uninstall and install coturn and nats-server when "build from source" and Debian 12

When using Debian 12 with the parameter "$SIGNALING_BUILD_FROM_SOURCES" = true, the coturn and nats-server services are successively uninstalled (line 51) and then reinstalled (line 94).

Perhaps it would be more relevant to test the Debian version beforehand to avoid this unnecessary operation?
