Move macros, hold taps, and combos to standard JSON format UI editability

Is there a way that we can get some of the macros and hold taps etc. broken out so that we can configure it directly within the GUI in the Glove80 layout editor?

Yes, that should be possible by generating the JSON file directly rather than the DTSI snippets.
