Update external links to remove `main-docs`

https://github.com/substrate-developer-hub/substrate-docs/pull/1266 will make our lives a lot better - but external links all over, even with redirects, should be updated where we can. Especially those in Parity and W3F maintained places (our repos, websites, wikis, etc.)
