MQTT choice of what to send

Is it possible to add a setting to the MQTT choice of what to send (voltage, inttemp, exttemp,bypass)?

how do I connect to the MQTT server when my server doesn't require a username or password? it is just isolated on my LAN and therefor no need for authentication.
