documentation adds additional examples for backend-customization

What does it do?

It adds examples of replacing a core action in addition to the examples of wrapping a core action that already exists.

Why is it needed?

I was looking to use this method to extend my controller and couldn't find additional information about the this.sanitizeInput and this.transformResponse methods which work differently when overriding the find method.
