lastmod date is showing in wrong format

The sitemap is returning string dates <lastmod>June 6th, 2021</lastmod> rather than 2021-06-06. Any ideas?

Weird! I cannot reproduce this one, and the sitemap definitely formats to Y-m-d 🤔
