This updates the required python string and also updates fastembed to 0.2.2 which supports python 3.12 as well.

Do you need to commit the poetry.lock file? Or did you just mean to commit the pyproject?

@mwildehahn just following on this to resolve conflicts and only make the necessary changes to pyproject.toml
