Data cleanup and add configs to run experiments

Cleaned up the dataset code to only include relevant dataloaders.

Also added in the config files to run the following expeirments:

• Satlas pretrain from scratch
• BEN S2 finetune
• METER S2 & NAIP finetune
• EuroSAT S2 finetune
