Add versions to docker images and releases

Hi all,

Firstly, thanks for this great solution.

Currently, docker images' tags do not match stack auth version, could you please add releasing to the github repo and then docker images artifacts. This will make life easier for people using the selfhosted instances since upgrade process will be smoother by using versions instead of Latest tag.

I believe that this will also reduce the amount of issues opened since most of the issues are related to Post Upgrade errors .
