Demo mode

Toggling demo mode should scramble all text to protect privacy.

Purpose:

• To show the app to others (non-recording)
• Hacking from coffee shops

Not meant for things with permanent record:

• Screenshot in README
• YouTube / User group presentation

However if we mangle by replacing instead rearranging the above is not an issue.

Or, replace with random dictionary words, while maintaining structure and length to give it a real feel.

The later requires baking in the dictionary into elm.js. In either case we need to add a seed number to the model.
