Adjustments doc - Locked Adjustments section seems defunct?

Adjustments can still be locked, so there is value in having something there. That section does seem more like a discussion topic than documentation though, and could be cleaned up

The calculated adjustments update whenever the order changes and they shouldn't be recalculated after they are added to the order.
