docs: inconsistencies

https://github.com/spotify/dh-virtualenv#how-does-it-work and the intro in doc/ clash. I'd update the copy in doc/ and would advise at removing the mention in readme (never good to duplicate details, because well, inconsistencies happen ☺).

But which one is right?

NB: Again, please do not change doc/ right now, let me take care of it.

Maybe we can make readme a tad more vague on details and point to the doc? Fully agree on reducing duplication
