Combine workshops: PetClinic + improving MTTR with custom tags

Is your feature request related to a problem? Please describe. Custom tagging could enrich the existing PetClinic workshop.

Describe the solution you'd like "improving MTTR with custom tags" to be added to the PetClinic workshop as an optional part.

Describe alternatives you've considered CSEs find that they often spin up both workshops for adequate coverage.

Additional context Topic brought up during CSE sync, supported by multiple teammates. CSEs would rather spin up one workshop and have the flexibility to cover all or some of the content, rather than spinning up multiple workshops to cover closely relevant topics.
