Update installation instructions to Python 3

Consider updating installation instructions (including submodules) to use Python 3 (pip3).

Some customers are following (copy/pasting) the installation instructions to the letter on the repositories and are running into issue due to incompatibilities with Python 2 for certain submodules.

Those customers who are following those instructions to the letter are doing what they should be doing.

Documentation is a first-class citizen. Thank you for taking ownership of it with this new issue. It means a lot.
