[Feature Request] Update Mod Organizer to 2.5.0

Feature Description

Now that proton 9.0 is stable, I think it could be interesting to update the version of Mod Organizer 2 from 2.4.4 to the 2.5.0 release.

I'd like to implement this in a PR. I wanted to discuss before about the modification. Should we keep the MO2 version hardcoded to the latest known working version ? In this case, we keep the hardcoded strategy and modify it to use the version 2.5.0. Or do we uncomment the previous code and comment the hardcoded one to always pull the latest MO2 version ?
