Keycloak and accessTokenValidation

I would like to see a Keycloak example on our docs. Here is an example that I have gathered with a README and demo.

We currently have 1 example of accessTokenValidation and it is using hydra. We do not have any example in Gloo Edge Docs using Keycloak.
