macOS build should be universal (ARM+x64)

This seems straightforward enough to do, although I don't have an ARM Mac of my own to be able to test the ARM portion of the binary.

Additionally, unit tests - should we run both architectures? It looks like the GitHub Actions runners are ARM as of macOS 14.
