Set defaults properly during initial setup

This will break existing installation, the reason the default wasn't used in those places is because of it should only default to True for new installations. Since it changes the preset list, this could break a lot of automations

This isn’t right either. A brand new install shows Eco/Boost, despite use defaults being ticked behind the scenes. On the subsequent reboot it then changes over to Quiet/Powerful, perhaps unexpectedly.
