README.md improvements; add descriptions of all available scripts.

Document all available scripts in README.md, not just the start.sh

This is a good improvement, but I'm wondering if it'd be better to roll all this into more comprehensive documentation. The project is certainly getting complicated enough that having a dedicated docs page on ReadTheDocs or hosted on Github Pages would be best.
