[Enhancement]: Build snap from source

What changes would you like?

Based on conversations in https://github.com/snapcrafters/obs-studio/pull/228 , we plan to move away from using the OBS PPA to building from source as this is the pattern for other snaps owned by snapcrafters. Also see https://github.com/snapcrafters/obs-studio/pull/228#discussion_r2407327556.
