Migrate AsyncAPI spec to v2

It looks like you're generating the AsyncAPI file and you don't accept PRs on spec files. In any case, I'd like to share with you how it would look like after migrating it to AsyncAPI 2.0.0.

@fmvilas this is really helpful, thank you! I'm actually working on a 2.0.0 version of the spec right now and this will get me the rest of the way through. Beyond being 2.0.0 it'll have a fair larger amount of schema and coverage of event types.
