The iText 7 Core 7.2.6 release is a maintenance release for iText 7.2.x which includes some recent CVE mitigations and backports from 8.0.x releases. It addresses two CVE issues (CVE-2023-6299, CVE-2023-33201) which were fixed in the release of iText Core 8.0.2. We've also backported the bouncy castle update to 1.75 version.
