chore: make `area-chart-interactive` chart data dynamic

Current chart data for the area chart interactive example uses hardcoded dates, which over time have become outdated. This has led to an empty chart being displayed at https://ui.shadcn.com/charts.

This PR dynamically adjusts the dates starting from today: new Date() and subtracts one day for every entry in the original chartData const.

This will ensure that the chartData used for these interactive area charts will always be 'up to date'
