Add iOS target

How involved would it be to add iOS as a target?

I am admittedly unfamiliar with how these existing bindings were written/applied per target platform, though I am willing to implement this myself with a bit of advice and suggestion.

I would be open to merge such a PR, but given that I'm totally unaware of how to test things for iOS I cannot really help with implementing that. One requirement for merging such a PR would be to have some basic CI setup in place to at least check that it actually builds
