Rename to CNCF Workflow Specification

TL;DR: Drop “Serverless” — rename to CNCF Workflow Specification because the spec now spans far beyond serverless, and the old name limits perception and adoption.

I intend to send a PR rebranding our files in these repos:

• https://github.com/serverlessworkflow/catalog
• https://github.com/serverlessworkflow/serverlessworkflow.github.io

SDK's authors are encouraged to maintain API backward compatibility, so we don't hurt users and our community by renaming packages.

If authors decide to rename, they are encouraged to release a new major version to avoid integration problems and let users migrate smoothly.
