docs: update LICENSE copyright to 2025

Updates LICENSE copyright year to 2025.

Unbreaks the LicenseTest.testLicenseShouldHaveCorrectYear() unit test, which blocks other PRs.

This is a single-character PR, however I realize you may not want external contributors updating your LICENSE file.
