[Development] Update the configurations of the demos

At the moment, most of the default configuration is duplicated in the demo configurations. This should be changed, so that only the non-default options (so the ones that do alter the behavior) are shown in the config.ini files.

Additionally, some configurations could be updated to use more realistic parameters in the config files, which are more applicable for using cashocs, than relying on paramters given in the literature.
