Add support for MPS and CPU-only

We want to test the HRM, but I have been doing our initial testing on an Apple M3 Max. I started with CPU-only support and then added MPS support so we can take advantage of the hardware offered by Apple. Also, some tests were added along the way to ensure fully device compatibility and model compilation.
