Improve Date Handling for Index Pattern Creation

all index patterns are created without a Date field. This works for general analysis, but the "specialty" flows like the Github stats could benefit from allowing that field to be set by the flow configuration.

We should also implement a mapping check. If an index only has one date in it's mapping then we should assume it's the default date.
