Both of those issues wouldn't have even let the machine boot. Can you provide the specs of your machine?
After searching some more about it, looks like it could be because of my storage (Samsung PM981 1TB). I tested with an external drive and it installs successfully on the external drive.

Is that an NVMe Drive? Or SATA?
The Samsung PM981 1TB is NVMe
the PM981 is known to have issues with macOS, I'd recommend replacing it with a M.2 SATA drive or a compatible NVMe drive
Has anyone tried to upgrade to Ventura ? Sambow's config runs flawlessly on Monterey but I got stuck when updating to Ventura. I also tried to upgrade OC to 0.8.5 and other kexts but still no luck

Try to do a fresh install rather than upgrading. How did you upgrade OC?
I'd like to update my config to the latest OC for Ventura support but I currently do not have access to my XPS.

I always update OC by this way:
- Replace bootx64.efi and opencore.efi with new version.
- Replace tools and drivers with new same version.
- Use OCConfigCompare tool to revise config.plist with new changes.
i also tried to do a fresh install with 2 version of OC but still got no luck.

That's basically what I would've done. Where does the Ventura installer get stuck at?
