Define multiple Docker projects in pillar

Apologies for the possibly dumb question, but how can I define individual projects using Salt pillar?

Currently the pillar is docker:compose, but can I define docker:compose:project1 etc?

I think the formula assumes one project, so you can't today. But it would be easy enough to add support for multiple projects I think.
