As far as I know, there is no way. But you can disable some buttons if you want. Just change the css classes accordingly and make it "hidden".

Customizing the toolbar is unrelated to this repository (Which seemed dead for a while). There is a thread on Trix's git which I started a while back and contains information on how it can be achieved.
