Many thanks, I believe I could reproduce your results. It appears that the seccomp assertions are not applied to running snap processes. Restarting the microceph.daemon process after connecting dm-crypt works...

Hi, I'm afraid using partitions for OSDs is currently unsupported by MicroCeph, due to sandboxing issues with snapd. We have an issue open for this in #146
That should be ok -- this is really a question of snapd doing sandboxing and only allowing whole block devices.
