Refine repository structure and account for workspace crates

With adding rustic_backend and the change to a workspace, we need to refine a bit the repository structure, e.g. the root Readme doesn't make a lot of sense in the way it is right now. We also need to keep in mind future additions of crates to the workspace, e.g. rustic_config and rustic_util_schemas.
