This is the category field, rather than the item_category relationship, or the reporting_category

We think that item_category replaced the functionality for category back in 2019, but there is still data in the field.

Criteria for completion

• [ ] Do a throrough check to determine that category is not still used anywhere.
• [ ] Write a migration to remove category from item
• [ ] confirm that item-related tests pass afterward
