Document all things backup

Details

In late March 2023 we spent many hours investigating a problem with the backups, only to find they were running on Heroku instead of Cloud66 or Azure

We don't want to repeat that

Document the backups into the wiki on gitbook Investigate whether we should move them, and come back to the Sunday planning meeting with recommendations

Criteria for completion

• [ ] investigate moving the process. Recommendations to planning meeting.
