Defining a specific geographic transformation using project()

Is it possible define or at least know which specific geographic transformation being used by the underlying reprojection?

For example, I am reprojecting a raster from WGS84 UTM 17N to NAD83-2011 UTM 17N.

Update: I can set the EPSG from and to, but I need set the datum transformation WKID 108363 image
