Create a demo for rs.app

Describe the feature I would love to have a full on demo on each and every function of the rs.app. From a students perspective, from a mentors perspective and from an admins/coordinators perspective. Also various common scenarios we have, like cross-checking, interviews, etc.

We could have the demo in video or text format for everyone to see. I think the project is big enough to have a nice documentation by now.

Also, we should not forget to demo all of the new features if we agree to do this

Additional context The idea came up because personally I don't use a lot of the built in tools like mass-actions, interviews (I use an external tool I created myself), the mentor dashboard (since it's new and no one showed how to use it), because I am afraid I will break something on an ongoing course. An ongoing course should not be a sandbox to test out new features of the app
