Set sensor-name in Suricata config

Suricata has proper support for tagging the source of the sensor. It doesn't show up in the docs, but was added in 2015 with this commit: https://github.com/OISF/suricata/commit/60ea49c777ad839fc6306f5731fd12aa98b0f011

It defaults to the hostname, if not set, but we should set it explicitly.
