update community tools in configure.md

wanted to keep these up to date in the docs, since people have been coming to the discord to ask about them

this PR should probably wait until https://github.com/robotastic/trunk-recorder-configs/pull/2 is merged - maybe also we can get the example ones from this trunk-recorder repo in there at some point
