Supervision headless mode (uses opencv-headless instead of opencv)

Description

I have been using supervision with my docker images but the issue is that supervision depends on opencv which is very large. it would be great if you made a verison of supervision without the excess weight.

Hi @mz0g and maintainers,

I would like to work on the Supervision headless mode (#1980) issue. I can implement the changes to allow Supervision to use opencv-python-headless instead of opencv-python, test it in Docker, and submit a PR.
