I guess it's not just adding the markers, the the whole styling of the plots (changing the colour, changing the marker type, changing the linestyle, using the style keyword, etc)

Thanks, yep that's the same sort of issue. A lot of these existing scientific regions already come as "masks" rather than polygons or boundaries and converting them to regionmask would...

How would we go about testing the CoreML versions already converted? I assume I can't just drop all of the files into the models directory?

I should add that I started from the Overleaf example so I already have the fonts/ folder (and therefore I'm not even sure why it's trying to recreate the fonts).
