I wanted to use your findings to write an (open source) library/application since it is not possible for me to sign an NDA.

Is it possible for you to release your documentation (DESFire.pdf) under a friendly license like copyleft/CC0/CC-BY-SA and the code under LGPL or even an OSI approved license like MIT/Apache 2.0?

I understand if your intention is to enforce GPL but it would immensely help if you can reconsider releasing your code under a different license.
