build: relax those deps

The repo has very constraining dependency requirements. This PR relaxes them so that it can be installed without pinning the .venv

have you tested with the latest version of all those deps to make sure the newest versions don't break anything?

Hi @rnapoli! Yeah, integrated my fork into our data pipeline at Liquid AI and it works well. It would be nice to see this merged and switch the src to your upstream.
