Why

A lot of Bun updates, we can't stay behind with them buns, please squash merge this because I had some struggles with my auto updater tool so it ended up in a lot of commits.

Update Nix derivation to provide Bun v1.2.23 in pkgs/bun/default.nix for the "Bun update!" purpose

Update the bun.overrideAttrs derivation to reference version 1.2.23 and set the corresponding fetchurl sha256 in default.nix.
