[BUG] use* hooks should allow optional on queryOptions

Describe the bug

A very common situation im running into is queryOptions in useList requires ALL properties even when I only want to override 1 setting.

This should probably wrapped in a Partial type or similar approach. I keep having to @ts-ignore it and its rather annoying.

This probably applies to all helpers around react query too.

can pass partial overrides to queryOptions.
