the docker image of redpandadata/console with latest tag points to v2.8.6 instead of latest version

The latest push 8 days ago has the latest tag mixed up. The version being pointed to is 2.x.x causing issues with yaml config in deployments, specifically complaining about : invalid keys: schemaRegistry

Hey @rshmrg , thanks for raising the issue. We'll fix it with the next release and adapt the CI pipeline to make sure it doesn't happen again whenever we cut a new v2.8 release!

It might be worth considering establishing general v2 and v3 tags which point to the latest releases of each branch?
